"I met Chef Paul during an appreciation luncheon Chef Sarah Stegner and I hosted at her restaurant back in January of 2023. Chef Paul walked in with this great energy that was infectious. I vividly remember him helping plate the dish that I was serving and how I felt having this distinguished chef support me with plating, but doing so with such humility and curiosity. After that event I saw him again at a Chicago Chef’s Cook event celebrating Ina’s birthday as he was stationed next to ours. He was extremely friendly, thoughtful, and again curious as I believe I had marinated a prawn in mezcal. Since then we’ve stayed in touch and he’s always treated me with care, kindness, and dignity. He never questioned my lack of experience and always embraced me with open arms. I’ve seen him at multiple events supporting different causes and he does so without question and with sincerity. We were so fortunate to have him station at Eat and Evolve 2023 and are incredibly lucky that he’ll be back at Eat and Evolve 2024. But before we get to October 21st, Chef and I will be putting together a collaborative 5 course menu at his steakhouse Vistro Prime. I am beyond excited to do this dinner with you in support of The Evolved Network. There have been multiple opportunities for you to back out of this and I wouldn’t have blamed you. As great leaders do you kept your word and we’re forever grateful. I know what it means to have your support and your buy in. I hope I can soak up just some of the greatness you’ve demonstrated over your distinguished career. Thank you for being a friend and supporter of our efforts. It means the world."
