The Evolved Network is extremely excited to begin a series of fundraising restaurant popups to draw attention to its mission: unconditional care through a holistic and therapeutic approach that functions to build a foundation for youth through their creation of a farm to table dining experience. A means to comfort the soul through their service. As part of this series, Sebastian teamed up with some of the best Chicago Chefs who kindly agreed to open the doors of their restaurants for Sebastian to share his vision and passion for food!

We cannot be happier to start this journey at Andersonville’s favorite UVAE Kitchen and Wine Bar with the gracious support of its owner, chef, wine sommelier, and friend Lindsey Anderson. UVAE is one of Andersonville’s hottest spots and yet still remains committed to service and care of those in need. With the support of UVAE’s staff, Sebastian will be executing an elegant 5-course tasting menu designed specifically for this occasion. In addition, Chef Lindsey has personally selected a wine pairing for each course.
