Chef Sebastian (The Evolved Network) and Gardeneers will break down the steps to make, not one but two delicious dishes utilizing jams made by Chef Aaron Gougis of CookinHungry and vegetables from Gardneers gardens. Finally, sit down to enjoy your masterfully created dishes and hear all about the therapeutic and holistic-based work with kids that The Evolved Network does through the farm to table process, and the work of the school-garden programming that Gardeneers does on the South and West side of Chicago.

As a group, we will prepare our dishes in the same manner as youth in both The Evolved Network (TEN) and Gardeneers programs. The first dish we will make is a duck leg slider with red cabbage and kumquat slaw, chile hoisin, & blueberry jam highlights flavors that will play with your taste buds and leave you desiring more with every bite. The second dish we will create is Flatbread with morels, smoked & herbed ricotta, arugula, and peach jam for those who appreciate the elegance and simplicity of ingredients, where they are allowed to just speak.


We’ll provide everything needed for your class, from the ingredients to the tools and you are welcome to bring wine and beer to enjoy during the class.

About the hosts
THE EVOLVED NETWORK

was founded to honor Sebastian White's father and aunt who passed away unexpectedly in the spring of 2020. Under Sebastian's direction, TEN has since made its mission to offer unconditional care through a holistic and therapeutic approach, to build a foundation for youth through their creation of a farm-to-table dining experience. It's a means to comfort the soul through their service, and acts of radical hospitality.


The Evolved Network offers free programming that provides a therapeutic space for youth through wellness, farming, financial literacy, and culinary training. 272 lives impacted this year.

THE GARDENEERS

Mission: Cultivating customized school garden programs.


Gardeneers works with Chicago’s South- and Westside schools and communities to contribute positively to the larger food system. We do this by supporting youth in our school garden and farm programs to build their own knowledge, skills, and habits to become leaders who care for themselves, their environment, and their communities.


Gardeneers see their work as social and racial justice work in the form of school garden education. Their hope is that one day every human has easy access to fresh, nourishing foods and all communities are healthy and sustainable.
