Join us on Earth Day for 5 course tasting menu designed by Chef Sebastian White of The Evolved Network, custom wine pairings curated by Chef, Owner, & Sommelier Lindsey Anderson, and dessert by "Team TEN" Sherlon Yates and Isaiah Scott.


All proceeds support The Evolved Network and help us provide a therapeutic space for at-risk youth through wellness, farming, financial literacy, and culinary training.

About the Chefs
Chef Sebastian White
Sebastian is a trained psychotherapist, who was working with youth who were gang-involved, labeled at-risk, and many others who were simply struggling with the complexities of life before being hit and devastated by the unexpected deaths of both his aunt (Gwen Barjon) and father (William White Jr). In their honor, he founded The Evolved Network, NFP and established Evolved Kitchen and Garden, LLC. Sebastian seeks to inspire through food and use its lessons to heal.

Chef Lindsey Anderson
Lindsey, owner and sommelier of Uvae Kitchen & Wine Bar, began her journey in hospitality at 16 as a cake decorator, advancing to serving at restaurants by 18. Graduating from Kendall College in 2006 with a Hospitality Management degree, she later earned her Level III Sommelier Certification in 2014. She has since served as a Level I Wine Apprentice instructor at Kendall College, alongside partnering, investing in, and consulting for various restaurant concepts in Chicago. Passionate about wine, Lindsey opened Uvae Kitchen and Wine Bar in June 2019.

"For those that don’t know my aunt Gwen Barjon passed away on April 22, 2020. As devastating as her loss was the one solace those that loved and knew her found was that she left us on Earth Day. If you knew how she lived you’d understand why this was so fitting. The Evolved Network exists because of the example she set using gardening, technology, science, creativity, sustainability, and her deep connection to the land to open the hearts and minds of so many students she touched. This dinner offers an opportunity to honor her legacy, keeping her name with us. She set a very high standard and we hope we’re living up to it."
